Monday Soup #1

The weather may not say it is fall, but my tummy is screamin' for it. Steve has class on Mondays and does not get home until about 10pm. So, it is just Zoe and me for dinner and I like to make big batches of soup during the cooler months. I have about 5 recipes and each one is mmm mmm good! Today I made Chicken Tortilla Soup. I always double the recipe and freeze some of the left overs in single portions for lunches. This way Steve still gets a good lunch when we don't have leftovers from the night before dinner, and I have yummy lunches too!

Here is the recipe:

Chicken Tortilla Soup

1/2 Lb Diced Chicken Breast
3 C Chicken Stock
3 tsp Olive Oil
1 C Diced Onion (diced)
1 C Red Bell Pepper (diced)
1 Jalapeno Pepper (diced and seeded)
2 tsp Chili Powder
2 tsp Salt & Pepper
2 tsp Minced Garlic
1 Can Stewed Tomatoes with Green Peppers (14oz.)
4-5 Flour Tortillas (cut in strips)
1 C Sour Cream

1- Heat a large pot on high, add oil, onion, peppers, chicken & tortilla strips and saute for 5-6 minutes
2-Add remaining ingredients, bring soup to a simmer and cook for 1-2 hours.
3- Serve and top with sour cream

Now, I know I got this from an add from somewhere and I do not remember where. So, I don't take credit for it's yumminess.

OH YUM! I am a BIG soup fan (kids.. not so much). I am SO writing this one down for when it finally cools off around here (not that I am complaining!!).

Ooo thanks for that Amy. It sounds a lot like a Hungarian Paprika Chicken which was responsible for me no longer being a vegetarian. I LOVE chilli.
